Choosing from a wide variety of sauces at #GrainTraders is the final step in creating a tasty and nourishing meal with us. With a total of eight different selections—Tamarind Chipotle Vinaigrette, Coconut Curry, Salsa Verde, Miso Caramel, Asian Gravy, Basil Vinaigrette, Wasabi Sauce, and Miso Caramel—guests are given a range of flavours to try from each time that they come by. We look at three of our crowd favourites, find out more on what goes into the making of each sauce, and what ingredients they would best complement.
Vegan/ Gluten-free/ Dairy-free
Contains garlic, onions, shallots and refined sugar
Ginger, turmeric, galangal (or blue ginger), shallots, kaffir lime, garlic, Thai basil, and chillies, are some of the main ingredients that go into the making of our Coconut Curry. All these ingredients are cut and freshly blended to produce fragrant curry paste before it is slow-cooked for an hour, then boiled for three hours over a low fire with coconut milk.
The Coconut Curry is based on a recipe that our executive chef, Gisela Golding, mastered while she was living in Cambodia. “However, in the version at Grain Traders, fish sauce and peanuts were eliminated to provide a vegetarian option that would be friendlier for guests with allergies,” Gisela says. “Curry in Cambodia is usually used as a base for full dishes, so our version is much more refined and is made with a nice amount of spice and sweet sauce to create a flavour that is much more natural.”
To top it off, our Coconut Curry is also low in sugar and fats, and goes well with any of our proteins. However, Gisela recommends our Roasted Chicken or Grass-Fed Beef Flank Parrillada as the best dishes to #MixEatLove.
Beetroot Feta Yoghurt
Contains honey (no refined sugar)
A great complement to our Lentils Patty and Sous-vide and Chargrilled Salmon, the Beetroot Feta Yoghurt is made with an interesting combination of beetroot, feta cheese, honey and Greek yoghurt, giving your meals at Grain Traders an extra special touch.
Gisela first fell in love with the well-balanced flavours of a beetroot tiramisu dish that she had in France, and since then, she has used the recipe for this dressing in a number of variations, restaurants, and menus over the years.
“For Grain Traders, I was looking for a sauce that would make for a good combination with our Lentils Patty, and I thought that this would be the perfect option,” Gisela says. “Yoghurt helps to soften out the flavours and at the same time, it’s also a great addition to any of our proteins.”
Besides bringing an added flavour to your meals, our Beetroot Feta Yoghurt is also great for digestion.
Contains soy and honey (no refined sugar)
Packed with an earthy flavour that tantalises your taste buds, our Basil Vinaigrette was introduced by our co-founder, Joshua Adjodha and later, re-created by our executive chef, Gisela, as our version of a pesto sauce—eliminating the dairy and nuts for a sauce that is vegan and allergy-friendly.
“Basil is an ingredient that has been essential to Kilo from the beginning so naturally, it’s very fitting to include basil as a sauce at Grain Traders,” Joshua shares.
Made with fresh basil leaves, the sauce is prepared in-house, and guests who come by to our restaurant can usually catch a glimpse of our staff working on the basil. A total of 3–4KG of basil leaves are used per week to produce one of our more popular sauces at Grain Traders.
“We blend the basil with extra virgin olive oil, white wine vinegar and honey for the right balance that will help to complement all our proteins and veggies on the menu,” Gisela says.
