When we mention Apple Kimchi to people, their reaction is often a mixture of puzzlement, disbelief, and distaste. It does sound like a strange combination to many; after all, one ingredient is sweet, fresh, and juicy, while the other is known for its pungent smell and for being the accompaniment to Korean barbecues and steaming bowls of rice. 

So why put them together, and how? We address the second part of the question in the first of three short videos we shared to our Instagram and Facebook, detailing the process of how our Apple Kimchi is made. 

As for the why, we believed that mixing the two ingredients together would result in a cold veggie that’s not only refreshing and delicious, but also good for you. Kimchi is no stranger to most, essentially being fermented cabbage mixed with chili peppers, garlic, scallions, and other spices. It’s packed with vitamins and gut-boosting bacterias which help to maintain healthy levels of cholesterol and strengthen the immune system, among other benefits. 

And of course, we’ve been told that an apple a day keeps the doctor away, and while we now know that’s a bit of an exaggeration, it’s easy to see why apples are so well-recommended. The humble green apple has plenty of fibre and antioxidants, so putting it together with kimchi results in one power-packed cold veggie that makes the perfect addition to any bowl.
