Ask people for their favourite fish, and chances are that salmon would make it to most lists.  Most prized for being rich in “good fats”, salmon is also a good source of vitamins and minerals — that, and it’s delicious too. To bring out the best of this fish, we decided to combine two cooking techniques: sous-vide, and char-grilling.

Following up on our Apple Kimchi, our second #TheGTWay video illustrates how these two processes, together, create our crowd-favourite Sous-vide and Chargrilled Salmon.

Sous-vide may sound fancy, but it’s really just a gentle water bath at a controlled temperature that helps us lock in all the nutrients and flavours, keeping the salmon tender and moist, without drying the salmon out. We’ve heard concerns of the fish being undercooked, but fret not; sous-vide for a carefully-timed 25 minutes, the salmon’s definitely cooked through.

The final step is searing our salmon on the grill to give it the char we all love. The result is a beautifully browned fish, with a crisp exterior and a fork-tender texture that simply melts in your mouth.
